This extremely rare booklet is undated but is likely from the 1950s. Many of the recipes contained in this booklet are “specialties of the house” at Maylie’s. When Maylie's closed on New Year's Eve in 1986, the restaurant ranked among New Orleans' oldest, at more than a century. It began when Bernard Maylie and Hypolite Esparbe, two French immigrants, opened a bar in 1876 that served the men who worked at the Poydras Street market. Free sandwiches were soon added. Over time the bar became a restaurant where regulars would return day after day for a table d'hôte menu that might include boiled beef, jambalaya and deviled eggs in spicy remoulade sauce. Booklet is 37 pages; a couple of pages from the inside are loose from the stapled spine. Otherwise the booklet is in very good condition. There are NO OTHERS of these to be found on line!!
